Fried Glass Noodle 炒冬粉

In searching what to make for lunch today, here is a simple meal for using some leftovers.
This is what I have in my refrigerator:
Ingredients:
1 small carrot
3 Asparagus
2 stalks Spring onion
10 medium Prawns
500ml Chicken broth
100g Lean pork
200g Glass noodle (here)
some fresh red chilli, cut small
Seasoning:
1/2 tsp Sugar
1 1/2 tbsp Oyster sauce
1 tsp Sesame oil
1 tbsp Cooking wine (Hua Tiao Jiu)
Mix seasoning with the 500ml chicken broth
Method:
- Soak the glass noodle in water for 20 minutes and drain.
- Cut or grate the carrots into strips.
- Cut the asparagus slant about 1cm and spring onion to about 3 cm length.
- Cut lean pork in strips ~ season with pinch of salt, pepper, 1/8 tsp sesame oil, 1/8 tsp light soy sauce and 1/2 tsp corn flour.
- Clean, shell and devein prawns, cut into halves ~ season with salt and pepper.
- Heat wok with enough oil, add 1 tbsp chopped garlic, stir fry garlic until aromatic and add carrot and add seasoning.
- Bring seasoning to boil add lean pork, prawns, asparagus, carrot and glass noodle, stir to combine ~ boil, cover and simmer for 5 mins at medium heat.
- Lastly add chilli and spring onion, serve hot.
