Strawberry Cupcakes


I was looking in my fridge the other day, there are still some leftover ingredients that I have used for my previous bakes. To clear all these stuff, I baked some cupcakes yesterday.

I still have some leftover Wilton decorator icing and just enough to frost 3 cupcakes~Cute (*.*) isn't it?





Ingredients: (Printable recipe)
100g Butter, softened
200g Sugar
2 Eggs

1 cup Milk (250ml)
1 tsp Baking soda

220g All Purpose Flour (plain flour)
1/4 tsp Salt
2 tsp Baking powder
about 3-4 tbsp Strawberry filling (use this for strawberry ice cream roll)

Method:

  • Sift flour, salt and baking powder together in a bowl. Dissolve baking soda in milk.
  • Cream butter and sugar until light. Add eggs one at a time, continue beating.
  • Then add in the rest of the ingredients beat till smooth (about one minute).
  • Stop machine and add strawberry filling into it, mix well.
  • Spoon batter into greased paper cases or silicone cups to 3/4 full.
  • Bake in a preheated oven at 170C for about 20-25 mins or until skewer inserted into the center of the cake comes out clean.
