Longan and Snow Fungus Dessert Soup龙眼雪耳糖水
Snow fungus or White fungus is a type of jelly fungus that is used in Chinese cuisine. This product is often purchased dried and must be soaked before use. It was traditionally used in sweet dessert soup.
60g Snow fungus
50g Chinese red dates ~pitted, rinsed and drained
1 can Longan ~drained (I used can longan to substitute dried longan)
200g Sugar or add to taste
5 Pandan leaves ~rinsed and tied into a knot
2 Litre Water
Method:
- Soak snow fungus in water for 30 minutes to rehydrate or until soft, then washed and use scissors to cut into smaller pieces.
- Put Snow fungus, red dates and pandan leaves into a pot and bring to boil over medium heat ~ then simmer at low heat until fungus and red dates are tender, about 30 minutes. Lastly pour in longan and simmer for another 10 minutes. Add sugar to taste.
- Discard pandan leaves before serving, either hot or cold.
Kitchen note: Can also add ginko nuts and wolfberries in this dessert soup
