Coconut Banana Friands 椰丝香蕉费南雪
I love friands and had shared 4 friand recipes in my previous posts. This time around I've changed the flavour to dessicated coconut and banana. It was a perfect combination. I baked the small cakes a little longer to get a little crusty outer layer with the sweet and soft banana on top. I've changed my favourite friand pan to mini muffin pan this time. So good to serve these cute dainty cakes warm with a nice cup of coffee.

Coconut Banana Friands
90g Butter, melted
70g Icing sugar
45g Plain flour/ all purpose flour
55g Dessicated coconut
3 Egg whites (105g)
1/2 tsp Vanilla extract
2 small bananas, sliced
- Preheat oven to 180 deg C. Grease well a mini muffin pan or friand pan.
- Sift the flour and icing sugar into a large bowl, then add in dessicated coconut and mix well.
- Place egg whites in a small bowl and lightly froth with a fork. Add to dry ingredients with melted butter and vanilla extract, stirring until just combined. (method same as here)
- Fill each muffin hole two-thirds full. Slice banana to a thickness of about 0.5cm and place on top of the batter. Bake for about 20-25 minutes or until golden.
- Remove from the oven, leave friands in pan for 5 minutes before turning out onto a cooling rack.
- Best to serve warm.

材料:约做20个
90克 牛油,融化
70克 糖粉
45克 面粉
55克 干椰丝
3个 蛋白 (约105克)
1/2茶匙 香草香精
2条 香蕉,切片
做法:
- 烤箱预热致180度。小玛芬莫子涂上牛油。
- 将面粉和糖粉过筛在大碗里,加入干椰丝拌匀。
- 把蛋白稍微打致起泡。蛋白和融化牛油倒入粉类了,搅匀即可。(请参考这里)
- 面糊倒入模内致2/3满。将香蕉切片致约0.5cm厚。放一片香蕉在面糊上。送入烤香烤约20-25分钟或致金黄色。
- 从烤箱取出后,蛋糕先留着烤模中,待5分钟后才放到网架待凉。
- 蛋糕要温温的时候最好吃。
