Light Meal - Mixed Vegetables Soup
250g Cauliflower ~ broken into florets
1 large Onion ~ shredded
4-5 large Tomatoes ~ quarters
30g Butter
1/2 tbsp Garlic ~ chopped
3 tbsp Sherry wine
3 tbsp All purpose flour (plain flour)
Method:
- Wash carrots, cauliflower, onion and tomatoes, cut accordingly.
- Heat butter in a deep pot over medium heat, add onion and garlic ~saute onions till soft.
- Then add carrots and cauliflower follow by sherry wine, mix well and sprinkle flour over it.
- Lastly add water and tomatoes, bring to boil~lower heat and simmer for about 45 minutes to an hour. Remove from heat and cool for about 15 minutes.
- Transfer soup to a food processor in two batches to process all the soup ingredients to smooth and pour soup back into pot again, bring to gentle boil and add salt to taste.
- When serve, add some sour cream on top or a dash of black pepper.
