Prawns with Golden Salted Egg Yolk 金沙虾球
Food stir-fried with salted egg yolk is also called golden sand cuisine as the stir-fried yolks give a golden yellow and sandy texture. The ingredients of salted duck eggs into a fine marsh and cooking it over low heat until it bubbles. Then add other ingredients to stir-fry for one heavenly dish.~Recipe adapted from Sauce Cookbook

Ingredients for Golden Salted Egg Yolk
3 Cooked salted egg yolks
1/2 tsp Minced garlic
1/4 tsp Minced ginger
- Mash and mince salted egg yolks. (place salted egg yolks in a plastic bag and use your hands to crush them finely)
- Heat oil and fry salted egg yolks until foamy
- Add garlic and ginger and fry until fragrant.
- Dish up and leave to cool.
Ingredients
1 slice of pumpkin (about 50g)
200g Prawns
1 1/2 tbsp Golden salted egg yolk
Seasonings
dash of salt
some rice wine
1/2 tsp plain flour
Method:
- Steam pumpkin until cooked, then mash and combine well with seasonings into paste.
- Shell prawns and remove veins and pat dry. Coat with pumpkin paste.
- Heat oil and deep fry prawns.
- Leave some oil in the pan and fry 1 1/2 tbsp golden salted egg yolk briefly over low heat. Stir in the fried prawns and briskly combine well.
Kitchen note:
The pumpkin paste gives the prawns a bright golden color and makes the dish more nutritious as pumpkin has a high content of beta-carotene.
Make sure that the oil temperature isn't too high to avoid burning the pumpkin batter.
